We’d like to ship in full pallets only. If we select this and Amazon decides the shipment needs to go to more than one location, would they ever split a pallet? (i.e ask us to send half a pallet to location A and the other half to location b)

If it is different products and you have one pallet of product A and one pallet of product B, there is every possibility they could split the shipment.
If its a single sku - multiple pallets - I have never seen them split the shipment.
If they do, try again an hour later or the following day and it might not get split.
