Product variations
dOes anybody know, if you list your product for product variation, does the parent product count as 1 variation or do you have to create a variation for each product?

The parent does not count as a child variation, the parent is intended to create the relationship between the product variants (also known as child variants). See below:
The parent product
The parent product is a non-buyable product used to relate child products. The Amazon catalogue uses the parent product to establish relationships between the child products. For example, if two shirts have the same parent, then they are related and are considered child products.
