With how much of a mess this whole thing is, we've decided to leave it and see what happens.
It states that the brands should allocate the representitives, but when i've contacted the brands we stock (mainly US brands), they've said they won't be doing anything.
Also, when looking on ebay they state article 51, which exempts any items that have previously been in the EU market before the 13th december, so that should technically mean all of our stock is fine.
I don't get how the customs/person responsible for checking parcels will enforce this, as I don't expect them to check every single parcel to check the product inside and see if that product has previously entered the EU, so I honestly don't think much will be done here.
Maybe when they scan the bardcode, it may show the respresentitive information there, but as i said above, items that are in the EU market before that date are exempt, so how do they check that? It doesn't make sense.
We won't be posting many parcels into the EU after the 13th, so it will be a good test to see what happens to the EU orders we do receive after that.

That point refers to each individual unit, not just the product type. And also it appears to apply to when each unit enters the union. if you are outside the union - that is most likely at the point you sell it to teh end consumer.
