How do I create a product with no product ASIN etc, its handmade by me

You do not provide an ASIN, Amazon provides them that when you create your listing.
If you mean an EAN barcode number, then you have to apply for GTIN exemption or licence EAN numbers from GS1UK.
You must create your own SKU code/number - it can be anything you want it to be.
