According to the help page on handling time, under the "Automated handling time (AHT)" section, Amazon automatically enables AHT when there's a gap of two days or more between set and actual handling times. Once enabled, it can't be turned off - this policy has been in effect since September 25, 2024.
However, there are a couple of options you might want to consider:
If you're selling custom, heavy/bulky, handmade, perishable, or media items, you can request a handling time exception. This would allow your SKU-specific handling time to override the AHT settings. You'll need to contact Selling Partner Support to create a ticket for this exception.
It might also be helpful to know that having AHT enabled actually provides some protection - your seller-fulfilled listings won't be deactivated if your Late Shipment Rate doesn't meet policy requirements.
To keep track of your handling time performance, you can check your handling time gap in the Fulfillment Insight dashboard. The system calculates this using your shipments from the last 40 days (excluding the most recent 10 days).
