How do I close my UK and European stores only

I want to close my UK and European listings only, as I am too small a vendor to be able to handle the VAT requirements. But I want to keep my US listings open. How do I close just the listings outside the US?

I believe, though am not totally sure, that you just need to put them on holiday settings.
