Using Price and Quantity file to update handling time
Our handling times are set to 2 days by default but we want to try 1 day hanglind on some of our best stocked products.
Am I right in thinking this is the basic format:
IE - Can I leave all the other columns blank and assume it’s not going to set quantity and price to ‘0’ for all of my listings?
I tried deleting unwanted columns but the upload failed.

Hi!
I had to look on our files that we loaded on december 2020 - we have filled sku, quantity and handling time. Price remained unchanged - If I remember it correctly, quantity has to be filled.
You cannot delete any columns as it will prompt error for sure 
We have had over 2000 skus per marketplace so file was our only option - if you have few products than better solution would be editing your sku

Yes, just make sure you choose partial update but like MP said, for only a couple of ASINs easier to go into inventory and edit handling time field and save.
