You responded at 10.57am this morning and they replied at 2.33pm saying the item had been delivered today which is plausible
What time does the tracking show it was actually delivered

How do you know customer has not received the order on Monday morning after your response?
Since its a non-track service the customer is being honest, dont you think?

Yes, we also have this situation! Customer is not telling the truth and opened a claim! That makes our account at risk of deactivation!
I think, Amazon should investigate the claim first not just put our account at risk of deactivation, because the system has all the message contact with the customer.

You’ll never know if customer was scamming or not but well done!

I’d say you’re jumping the gun there - more than a litle.
So, going by your title for this post it is IMPOSSIBLE for the item to have been deliverd in the intrim / between messages,
I’d suggest you give the cutomers a little more trust before jumping in with assumptions - if only for your own well being.
