You could go on holiday mode for the duration but if you are determined to keep offers open you could also change your handling time.
I'm not too sure how you can do that in bulk. If you have only a few SKUs it's easy enough to do it manually.
Go to settings > shipping settings > general shipping settings, and you can set your default handling time to 2 days.
Don't forget though that any messages need to be responded to within 24 hours irrespective of this, late responses will hit your metrics.
What I've done before is wake up early. Go into holiday mode and process all orders.
Then at 2 pm, or whatever your cutoff time is, turn off holiday mode.
You miss a few hours of orders, but the biggest problem is if you get orders that are stuck in pending, so there's a risk.
