Importing from UK to France IOR

I am importing from UK to France by air for PAN EU. I plan to be the ROI to save on costs, has anyone tried this and is it straight forward to figure out? Will a general EU EORI number be enough? eg a German EORI number. I have a UK company but I planned to set up an EU company so I can put an EU address on the customs forms so I can act as the ROI. Can this be done or it must be a French company address? Appreciate your thoughts anyone.
