The Amazon help pages states
Enter Insurance Information
All Ship-to-Store Services providers are required to carry the appropriate general liability insurance.
To enter and submit your insurance information, follow these steps:
Click Settings in the top right of the Seller Central home page and click Account Info.
Click Business Insurance under Business Information.
Click Edit in the Insurance Information section.
Enter your General Liability Insurance information.
Click on Save.
I have just tried this also. I contacted support and they have stated:
'Please be informed you do not have to upload documents for verification. You will be requested for details upon receipt of a claim.'

I already bought a policy for the U.S site where all the details have to be uploaded, my policy covers all of the sites including the UK.
There is no requirement to upload the documents to UK and EU as was said here, whether they will enforce a mandatory insurance for UK and EU I don't know, but it is always best to have it anyway.
I've used Simply Business insurance.
I already use for Wayfair and offline trade.
I'm paying quite a lot less than £1800/pa.
There is no option to update details, I have also bought policy but could not find any requirement in account settings or elsewhere.
